Delicious Rice Bowl With Salmon and Vegetables

Are you looking for a delicious rice bowl with salmon and vegetables recipe, also known as Korean Bibimbap? Then you are in the right place.

To make this meal I was inspired by Korean Bibimbap that I used to eat a lot when I lived in Korea. It’s a healthy meal that Koreans eat on a regular basis and you can find it in almost every Korean restaurant even outside Korea. 

Bibimbap means “mixed rice with meat and assorted vegetables”. However, you can make endless variations of this dish depending on your preferences. 

This variation of bibimbap is not traditional, but it’s amazing, especially if you’re a salmon lover like me and trying to eat healthily. This rice bowl with salmon and vegetables will help you get the proper nutrients that your body needs.

It’s also a great meal if you’re on a budget. You can replace salmon with ground beef.

Okay. Let’s get started!

This recipe serves 2-3 people.

Ingredients:

  • 1 ½ cup (200 g) of rice
  • 10 oz (283 g) of salmon fillet
  • 2-3 eggs (1 per each serving)
  • 1 medium-size onion
  • 3 medium-size carrots
  • 1 big sweet pepper
  • 1 cucumber
  • Hot pepper paste for bibimbap
  • 1 tbsp of salt for raw salmon or ½ tsp for salmon that you will cook
  • 1 tbsp of soy sauce 
  • ½ tsp of sesame oil
  • 1 tbsp of any oil to slightly fry vegetables

Instructions:

1. Prepare salmon

To prepare your salmon fillet you need to rub salt onto it, put it into the fridge and let it absorb while you’re cooking. (You can also use other seasonings if you want, I only use salt). 

I had two of these salmon fillets.

2. Cook rice

Rice bowl with salmon and vegetables cannot be without rice, so whether you cook rice on the stove or in the rice cooker, do it. Here’s how to cook rice on the stove.

3. Cut and fry veggies

Now it’s time to cut and fry carrots and onion. Don’t mix up your vegetables, remember that you will need to assort them when you start assembling your rice bowl.

Cut and fry the onion, then do the same with carrots.

Peel and cut the cucumber and sweet pepper. Put your vegetables in different bowls, or anywhere to make sure you don’t mix them.

As I mentioned it’s up to you and your preferences what vegetables you want to use. It’s hard to mess up this meal haha

4. Rinse and dry salmon

After you have your vegetables cut and fried, take out your salmon fillet/s from the fridge, rinse it, and dry slightly patting it with a paper towel. 

5. (Optional) Fry salmon 

I’m the only one in the family who’s obsessed with sushi and raw salmon, so I cut and fry the salmon fillet for my husband and kid. It doesn’t take longer than 5 minutes.

6. Sprinkle your carrots with sesame oil

There’s no instruction needed for this step 🙂 I bought this one back when I lived in Korea. You can use any sesame oil.

7. Fry eggs

If you’re planning to make 2 servings fry 2 eggs, if 3, then 3. I don’t sprinkle it with salt or anything. 

8. Start assembling your rice bowl 

When you have all your ingredients prepared you’re ready to start assembling your delicious rice bowl with salmon and vegetables. Again if you’re making 2 servings divide your ingredients among 2 bowls.

1. Rice – Put the rice into a bowl and sprinkle it with soy sauce.

2. Add veggies and salmon 

Assort vegetables and salmon (or any other meat you prepared) on top of the rice.

3. Add an egg.

4. Add a little bit of hot pepper paste and serve. I got this one in a Korean store.

9. Mix the ingredients well in the bowl and enjoy!
